Our Story
The solera is one of winemaking's oldest traditions.
Barrels are stacked in tiers, each holding wine of a different age, and over years and sometimes decades they are slowly, fractionally blended. The youngest wine refreshes the oldest. The oldest gives depth to the youngest. Nothing is ever fully replaced. Nothing is ever frozen in time. The result is a living blend that carries the memory of every vintage that came before it.
We borrowed the name because it felt honest. This building has stood on Main Street longer than most of us have been alive, and we are the latest in a long line of people who have unlocked these doors in the morning and turned the lights off at night. The bones are old. The wine list is new. The way we cook is shaped by what we have learned, and the way we serve is shaped by who came before. Old and new, sharing the same room.
The bones are old. The wine list is new. Old and new, sharing the same room.
Brandon spent the better part of a decade in restaurants before he ever owned one, then spent the years after that flying airplanes and building companies. Somewhere along the way, wine stopped being a thing on the table and became the thing he chased. He trained in wine through the Wine & Spirit Education Trust, the kind of study that humbles people who thought they knew what they were doing. The list you are about to read is his. Some bottles you will recognize. Some you will not. All of them are here for a reason.
For Todd, Solera is a reflection of everything he loves: hospitality, design, wine, food, and the simple act of bringing people together. His goal was never complicated. He wanted a space that feels both refined and familiar from the moment you walk in, the kind of room you settle into without being told to.
So pour something. Stay a while. The wine in your glass is younger than the building you are sitting in, and older than the night we are about to have together. That is the whole idea.
